Homemade Coleslaw – Ruby Relish

We recently featured a recipe for Pickled Red Cabbage in our pages and subsequently received a number of emails requesting further recipes using the delicious seasonal Red Cabbage.

We were more than happy to share our very own Ruby Relish (Homemade Coleslaw) recipe for you to try. We hope you enjoy it.

Homemade coleslaw is one of the easiest and tastiest, healthy dishes you can make. Did you know you can whip up a delicious homemade coleslaw like the one in the picture in less than ten minutes?

Homemade Coleslaw is healthy, fresh, and full of nutrients.  This delicious Ruby Relish can be eaten as a healthy stand alone vegetable snack, or served as an accompaniment to fish, chicken, eggs, pork, barbecued food, as part of a sandwich filling, and almost any other food you choose.

One of the favourite midweek suppers in our household is a couple of slices of delicious Welsh Rarebit with a mound of this homemade coleslaw on the side.  Heaven on a plate!

Ingredients

1/2 Red Cabbage.

1 Large Red Onion.

2 Large Carrots.

3-4 tbsp Light Mayonnaise.

1 tbsp Freshly squeezed Lemon Juice.

1 tbsp Wholegrain Mustard.

2 Drops Tabasco Sauce

1 tsp Sugar.

1 tsp Table Salt.

Good grind of Black Pepper.

Few Leaves Flat Leaf Parsley or Coriander for garnish.

Homemade Coleslaw in 10 minutes.

Finely shred or grate the cabbage, onion & carrots, place in a large mixing bowl  and toss until nicely combined.

In a small bowl or jug, mix together the mayo and other remaining ingredients and stir until smooth.

Pour the mayonnaise mix over the vegetables, fold the sauce into the vegetables until  the cabbage, onions and carrots are evenly coated.

Cover loosely and refrigerate for at least two hours before serving.

Garnish with Flat Leaf Parsley or Coriander to serve.

As with many recipes homemade coleslaw can be varied, added to, or subtracted from according to your personal preferences. Try using Courgettes, Raw Beetroot, Red Radish, Celeriac, or even Beansprouts as alternatives or additions to your slaw.
